The Macromatic ARF240A3R alternating relay should work for your application. The relay would be wired as shown below:
Each pump should have a contactor to start the motor. Wire the Load 1 and Load 2 outputs in series with the contactors. The control switch closes and starts the pump. When it opens, the alternating relay will switch to the other load and be ready for the next closing of the control switch. The alternating relay must remain powered up at all times as shown.
